It’s the most wonderful time of the year! The clubhouse is ready to kick off your holiday season in style with our annual five-course plated Five Course Festive Christmas Dinner.
To launch our palate adventure, we begin with a holiday platter complete with a cranberry cheese ball, a rice wrapped vegetable spring roll and melted brie & mushroom bruschetta. Our twist on a holiday classic, the cheese ball, kicks it up a notch with delicate goat cheese expertly crafted together with chopped pecans, dried cranberries and fresh seasonal herbs served alongside toasted flatbread points. A fresh hand wrapped vegetable spring roll is complemented with a Thai peanut sauce. To finish your first course, savory caramelized mushrooms are placed atop melted brie on a toasted crostini. Our next stop on this adventure is an eye-popping course of a cucumber salad ring stuffed with spring mix, creamy goat cheese, candied pecans, drizzled with a balsamic glaze and a touch of olive oil. Course three is an ultra-creamy roasted cauliflower and mushroom soup, this is a dream of a cozy soup season recipe. It’s rich in comforting flavor and packed with nourishing and healthy ingredients for a feel-good soup that will warm you up from the inside out. Next, you get to pick your entrée from Pomegranate + Fennel glazed grilled lamb chops. The secret is the pomegranate molasses. We combine it with oregano, fennel, and olive oil to make a bold glaze. (You won’t miss the mint, we promise.) Also available is a Miso marinated halibut, pan seared served with a soy reduction – you’re totally craving some fresh fish with fresh flavors. Your third option is a roasted tenderloin steak topped with a made from scratch brandy porcini butter. All of these delicious entrees are served alongside fingerling potatoes and bacon wrapped green beans. You thought those option were tough? Wait until you hear about dessert! You can select from Chocolate Pots de Crème topped with amaretto cherries and fresh hazelnuts or pumpkin lava cake oozing with caramel and topped with house made vanilla ice cream.
These dinner decisions will be enhanced as you listen to live music of melodic holiday tunes mixed with classic favorites, and smooth jazz all performed by the dynamic duo, Tier 2. Gather your friends, family or friends that are like family and join us in the Crystal Dining Room on Friday evening, December 2nd. All reservation will be seated simultaneously at 6 PM.
